Cake Mix Cookies

These cookie recipes are great when you need a quick dessert to bring to church functions or even school bake sales. And let's be honest, we all have a box of cake mix in our pantry, right?

I mean, I have 4 boxes of vanilla cake mix in my pantry as I'm sitting here typing this post. Oh, and a box of spice cake mix. I love to use that for my pumpkin donuts.

But today I'm really craving the Chocolate Peanut Butter Cup Cake Mix Cookies and yes, I do have a box of chocolate cake mix in my pantry!Which recipe do you think you'll make first?

TIPS FOR MAKING CAKE MIX COOKIES

  • Ignore the directions and extra ingredients that you normally would follow from the back of the cake mix.
  • Instead, follow the directions listed the particular recipe you want to make.
  • Do not over-mix the batter.
  • If the batter is too soft, chill the dough for about 30 minutes before placing on baking trays.
  • Usesilicon baking matsorparchment baking sheetson the baking trays to keep the cookies from sticking.
  • Do not over-bake the cookies!

  • 1 box cake mix
  • Vegetable Oil
  • Eggs

Directions

  • Preheat oven to 350 degrees.
  • Prepare a large baking sheet with parchment paper.
  • In a large mixing bowl, beat together the dry cake mix, vegetable oil, eggs.
  • Depending on which cookie you are making, stir in the add-ins. (SEE LIST BELOW)
  • Using a cookie scoop or a spoon, drop scoops of dough on the prepared baking sheet, at least 2 inches apart.
  • Bake about 10-12 minutes, or until set in the middle.
  • Cool 2 minutes on the baking sheet, then transfer to a wire rack to cool completely or until just slightly warm.

Baking Tip: It's always best to refrigerate the dough as it's easier to work with chilled dough. Cake mix cookies tend to be a little stickier than traditional cookie dough because of the added oil.

  • 2 eggs

Instructions

  1. Preheat oven to 350 degrees.
